A Haitian food truck in downtown Miami, started in memory of the owner's father. The format is simple and it works: rice, your choice of griot, chicken, turkey or shrimp, three plantains, and pikliz and gravy on the side. Cooked fresh, packed to go, and gone by mid-afternoon — they run a short midweek lunch window. Nothing about it is complicated. That is the appeal.
