ZUMA – Restaurant
Zuma sits on the Miami River at the foot of Biscayne Boulevard Way, and the open kitchen is the whole argument: a sushi counter, a robata grill and a hot kitchen working in full view since 2010. Rainer Becker's contemporary izakaya cooking arrives as roasted lobster with shiso ponzu butter, wagyu skirt steak under shiso chimichurri, seabass sashimi with yuzu, truffle and salmon roe, fatty tuna rolls, and a coconut-custard chawan mushi with mango and papaya.
