ZURU RAMEN NMB – Restaurant

The North Miami Beach outpost of Zuru Ramen Bar sits on Biscayne Boulevard and keeps the group's standards intact: an 18-hour pork bone broth for the tonkotsu, spicy miso and black garlic bowls, and a six-hour chicken pai tan built with sous vide chicken breast, thigh chashu, cilantro and crisp burdock. Shoyu arrives with sweet corn, fish cake and a whole ajitama. Takoyaki, gyoza, bao buns and Korean chicken wings cover the openers; karaage and chashu don the rest. Diners keep coming back for broth with genuine depth and bowls that defeat them. Quietly excellent.
