A Peruvian kitchen on wheels, parked deep in south Miami-Dade on Southwest 189th Street, running its cooking through a Latin fusion filter rather than a purist one. Lomo saltado and arroz chaufa anchor the order; around them come tacos de carne, tacos de pollo finished with crema and guacamole, tostones rellenos, egg rolls, and churros at the end. The window keeps a narrow schedule, one weekday evening and four hours, so catering does much of the heavy lifting, with tailor-made menus built to order for each booking. A small operation doing straight-ahead cooking, and well worth planning the week around.
