Carne en Vara Express started as a food truck and cooks the way El Llano does: beef on a stake, wood fire, nothing hurried. The name is the dish. Order it by the half-pound or the full pound with two sides, or take the Full plate that adds pork rib and chorizo. Cachapas arrive folded over queso de mano and nata; arepitas, patacones and tostones trio cover the rest. Tequenos, empanadas and chicharron start things; sopa de costilla appears at weekends.
