AGAVE AZUL COCINA MEXICANA – Restaurant

On Red Bug Lake Road in Winter Springs, Agave Azul runs bright and loud, a family-owned Mexican dining room trading since 2000 with indoor tables and a patio. Tortillas are hand-pressed from corn molino, and the taqueria list rewards it: birria brisket in guajillo broth, carnitas braised twenty-four hours, Ensenada-style tempura grouper, crispy cauliflower. Before that, street corn esquites, pulpo tostada, al pastor sticky wings, tlayuda. Fajitas al carbon arrive sizzling and generously. Margaritas carry names like Amante Picante and Pina Negra, and there are tequila and mezcal flights. The kitchen runs until ten, and eleven on Friday and Saturday.
