AJI CEVICHE BAR SARASOTA – Restaurant

The Sarasota room of chef Freddy Zubieta's Peruvian group, sitting on South Tamiami Trail and open from midday until late. Ceviche runs to more than fifteen preparations, from El Achorado with its crisp fried seafood folded through the raw, to El Carretillero under fried calamari and yellow pepper sauce. The Ají Trio settles arguments. Whole fried pargo comes out shatteringly crisp and big enough to share, and the leche de tigre underpinning all of it is sharp enough to wake up a table. Citrus, chilli and cold fish, all handled properly here. Sarasota does not have much else like it.
