Peruvian fusion in downtown St. Petersburg, first floor on First Avenue South, from the group chef Freddy Zubieta built around a single obsession. That obsession is ceviche, listed in more than fifteen forms: El Achorado working crisp fried seafood through the raw, El Carretillero under calamari and yellow pepper sauce, and the Ají Trio for the undecided. Whole fried pargo covers the hot end of the menu and arrives loud. The leche de tigre is sharp, the chilli is not decorative, and the fish is handled with care. Downtown has plenty of other options. Few of them taste this specific.
