Chicken is the whole point here, and the Encalada brothers built the menu around it. Ave by Divino sits on NW 57th Avenue up in Miami Gardens, where chef Christian Encalada runs Peruvian pollo a la brasa alongside dishes that stray happily off script: chicken and waffles, Chifa-style wings, a crispy chicken sandwich, milanesa, aji de gallina, arroz chaufa. Tequenos, tostones, maduros and sweet potato fries fill the sides; picarones and chicha morada close it out. Lunch and dinner, dine in, take away or order delivery. Not a traditional Peruvian chicken house, but a crisp, golden argument for the bird.
