BAGEL BAKERY – American
The Bagel Bakery has been baking in Gainesville since 1999, when Ken Rembert opened it on a simple premise: fresh every day. In 2007 the shop began buying fair-trade beans from a Guatemalan village through Rembert's missionary connections, and it still roasts and brews all of its coffee on site. Current owner Jason Cole has kept both habits going. Doors open at seven and close at three, daily, and the small dining room fills quickly; the bacon and cheddar bagel is the house recommendation. Local art on the walls, catering out of the back kitchen. Coffee-shop comfort with bakery discipline.
