Open on Ponce de Leon since 1998, Basilico has held one line for a quarter century: classic northern Italian technique, a Josper charcoal oven, and a dining room that stays calm when the Gables gets busy. Start with carpaccio de manzo under shaved parmigiano, burrata with tomato, or calamari fritti in spicy sauce. Pasta is the heart of it - linguine ai frutti di mare, pappardelle with porcini and truffle oil, ravioli of gorgonzola and pear in fig sauce. From the coals come pluma iberica, lamb and bistecca. Finish with the house tiramisu. Two sister rooms sit nearer the airport.
