Neapolitan pizza done by the book in Viera, where co-founder Enrico trained with the Associazione Verace Pizza Napoletana and the dough is fermented daily. The pies show it: mortadella and burrata with pistachio crumble, arugula and herb oil over San Marzano DOP tomato; a Meat Lovers of soppressata, pepperoni, fennel sausage, mozzarella and fresh ricotta; a four-cheese with leeks and pepper. Bread is baked every morning, meatballs are rolled in-house, and the operator calls its meatball sandwiches a signature. The space is modern and industrial, drawing families, friends and date nights alike. Closed Mondays. Naples technique, a Space Coast postcode.
