Inside PGA National Resort, the Butcher's Club plays fifties swagger straight: black marble tables, gold chandeliers, low light and a room built for a long dinner. Jeremy Ford, winner of Top Chef's thirteenth season and a Michelin star holder for Miami's Stubborn Seed, sets a menu of dry-aged and premium cuts alongside a raw bar. Florida stone crab arrives with dill Dijon emulsion and habanero hot sauce. There is a wagyu steak burger, Alaskan halibut, beef Wellington and, for an ambitious table, a swinging wagyu tomahawk. Dinner only, seven nights, from five o'clock. Serious steakhouse cooking, played with real confidence.
