On Herzl in Rehovot, Burger Station does one thing with conviction: smash burgers, thin patties pressed onto a hot griddle until the edges go crisp and lacy. The Station Smash builds two 110-gram patties with caramelized onion jam, pickles, tomato and vegan cheese; the Smoky Smash layers in smoked brisket and barbecue sauce. Crispy chicken sandwiches, onion rings, corn nuggets and potato puffs cover the rest of the table. The beef is ground fresh on site each day and the kitchen keeps rabbinical supervision, closing for Shabbat and reopening Saturday evening, then running to one in the morning.
