CALUSA BREWING – Restaurant
A McIntosh Road taproom in Sarasota that solved the brewery-food problem by building a real kitchen into it. Calusa Brewing pours its own beer; PigFish, chef Steve Phelps's sustainable gastropub, cooks. The signature is Open Blue cobia, blackened on the grill and stacked with bacon tartar on a potato bun. Around it sit a grass-fed Providence smash burger with PigMac sauce, cornmeal-fried shrimp with jerk tartar, crispy brussels sprouts in ponzu under bacon-peanut chilli crisp, and beer cheese made with Calusa's own beer for soft pretzels. Doors open at noon most days. Sustainability here is a menu, not a slogan.
