This is the truck end of the business: a Carne en Vara Express outpost on NW 84th Avenue in Medley, running wood fire from noon until midnight on Friday and Saturday. The menu still reads like a truck menu. Cachapas come with queso de mano and nata, or loaded with pork ribs and chicharron. Pan llanero carries the roast beef; choripan carries chorizo, pico de gallo and guasacaca. A super papas bowl buries fries under carne en vara, fried cheese and sauces. Llanero ribs and sopa de costilla anchor the heavier end. Everything here is cooked over wood, every day.
