Eleven in the morning to half past eight at night, seven days a week, on South Dixie Highway in Pinecrest, this counter does one thing seriously: cheese, and everything that belongs beside it. Order a two- or three-cheese flight such as Saint Angel with L'Amuse Gouda, or Fromager d'Affinois, Midnight Moon and Manchego, with saucisson sec, prosciutto or pate added. Sandwiches run from a cheddar melt with sundried tomato pesto to Spanish serrano with manchego and olive tapenade. Soups include tomato bisque and broccoli cheddar. Fondue arrives with baguette and potatoes. Wine, craft beer, and then Torta Santiago to close.
