Haitian and Bahamian home cooking off a Port St. Lucie truck, run by a cook with two decades behind the stove. The board leans on classics: griot, fried pork plated with plantain, salad and pikliz; whole fried snapper with the same trimmings; tasso kabrit and tasso turkey; curry goat with rice, coleslaw and macaroni. Haitian pate kode, Haitian macaroni and rice and peas fill out the sides, while tacos, cheesesteaks and burgers cover anyone who wandered over uncommitted. Desserts come from an in-house pastry chef. Orders are placed and paid ahead, then collected Tuesday through Saturday. Island food, no ceremony.
