A Miami breakfast institution built on plain American cooking and an early alarm clock. Chuck Wagon opens at dawn across three southwest-Miami dining rooms, all country-and-western in style and all serving the same long card. Eggs come any way you like beside home fries or grits; the all-meat omelette stacks ham, sausage and bacon; the Belgian waffle arrives under fried chicken strips. There are Greek and western omelettes, breakfast burritos, thick Texas-toast French toast. Lunch brings liver and grilled onions, pot roast, burgers and fresh mashed potatoes. Families fill the booths. Nothing here is fancy, which is entirely the point.
