Dinner only, doors at five, on a narrow lane in St Augustine's old town: Collage has cooked from scratch at 60 Hypolita Street since 2007. The kitchen works local seafood, steak, lamb and veal through international flavour profiles. Appetisers include scallop saltimbocca, beef tenderloin carpaccio, escargot, gambas al ajillo and burrata for two. Mains stretch from black grouper and homemade lobster ravioli to New Zealand lamb rack, veal Orleans, poulet a la moutarde and a Collage surf and turf. Sweet corn bacon chowder starts many meals; creme brulee and butter rum cake close them. Intimate, candlelit, unhurried, and deliberately small.
