COOSH'S BAYOU ROUGE – American
Durand ‘Coosh’ Willis and his wife Margaret, both Louisiana transplants, opened Bayou Rouge in 2001 to put real south Louisiana cooking on a Tallahassee table. Seafood gumbo, jambalaya, crawfish etouffee and red beans and rice anchor the Cajun side; fried crawfish tails, boudin balls, hand-battered gator and voodoo shrimp under their CooshCoosh sauce open the meal. Not in a Cajun mood? Wings in eight sauces, po’boys, burgers and salads. Breakfast runs to beignets, shrimp and grits, and fried chicken smothered in sausage gravy over biscuits.
