Boca Raton's outpost of the CVI.CHE 105 group brings Chef Juan Chipoco's Peruvian playbook north from Miami, and the ceviche does most of the heavy lifting. Order the classic cut of white fish in bright leche de tigre, or push further into El Ganador with octopus and scallops, or the Nikkei tartare of tuna with quinoa pop. Starters lean generous: papas a la huancaina in Andean yellow-pepper cream, anticuchos grilled over smoky fire, gyozas filled with seco chiclayano. Nikkei rolls and a truffled hotate follow.
