CW PRIME – Restaurant
On Longboat Key, at the resort end of Gulf of Mexico Drive, CW Prime plays the modern steakhouse straight: dry-aged beef, caviar service and a wine list that took a Wine Spectator Award of Excellence in 2025. Executive Chef Drew Adams builds the card around 35-day dry-aged tomahawk, Kansas strip and cowboy cuts, prime ribeye and Angus filet, with wagyu sold by the ounce. Before that come grilled oysters under wagyu-fat mignonette, tuna crudo, beef tartare and a wedge with house-cured bacon. Maitake mushrooms and pommes mousseline hold the sides. Dinner only, and a private room seating up to ten.
