Dr. Limon is a Peruvian ceviche bar chef Carlos Brescia, born in Chiclayo, built around a running medical joke — servers dressed like clinicians, dishes named like prescriptions. The Miami-area brand grew out of a 2012 Kendall original and now spans several South Florida locations, all working from one shared menu. Ceviches carry names like Fiebre Amarilla, Remedio Casero and El Loco Calato, the last a fried ceviche finished with acevichada cream, alongside tiraditos, Nikkei rolls such as Che Carlitos, and mains like Ají de Gallina and Lomo Saltado. Regulars keep returning for the generous portions and the theme's silliness.
