On Main Street in Miami Lakes, Francisca roasts marinated chicken over coals until it comes out smoky and still juicy, sold whole, half or quarter, or folded into the Francisca chicken bowl. The meat side runs to flap steak with blood sausage and pork sausage. Around it sit the things that make it Latin American rather than merely grilled: charcoal-roasted white corn cakes, Colombian-style fried plantain rounds, pan de bono, corn pretzels made with white cheese. Built by brothers from a Venezuelan restaurant family. Generous, smoky, and to the point.
