Ishtabach – Restaurant
The shamburak is the whole point: a Kurdish-Syrian pastry, hand-shaped and baked in a taboon, stuffed with spiced meat, fried onions and chimichurri or with Indian-spiced mashed potato. The original opened in Jerusalem's Machane Yehuda market and became a fixture there; Shlomo Elbaz brought the recipes to Toms River, on Route 9, in late 2024. Around the pastries sit Israeli comfort dishes: chamin, kube, and ashpolo of meat, rice, chickpeas and carrots. Kosher, loud, and unmistakably transplanted from a shuk.
