JUST PASTA – Restaurant

A small Hialeah kitchen that makes pasta the short way: flour, egg, time. Just Pasta rolls fresh sheets daily and sends them out under sauces that hide behind nothing — ravioli stuffed with ricotta and spinach in cream, an ossobuco ravioli cut with spicy arrabbiata, fettuccine bound in egg yolk, parmesan and bacon, potato gnocchi in plain tomato, pappardelle with wild mushrooms and a lift of truffle oil. Weekday lunch hours only, mostly to go, run by chef Maicool Veloz since 2023. Handmade, and it shows.
