Ten seats at the sushi bar, a chef working an arm's length away, and an eighteen-course omakase that turns over with the seasons — Kōsen is Tampa's most concentrated dining room. Executive chef Andrew Huang builds each progression around seasonal fish and shellfish, served a piece at a time, tradition bent gently toward invention. A separate kaiseki room runs a shorter five-course tasting for anyone who wants the idea without the full arc. The whole place seats twenty-five. It has held a Michelin star two years running. Book early, arrive hungry, and let the counter set the pace.
