Chef Danny Kou's kitchen sits a block off the sand on North Fort Lauderdale Beach Boulevard, and it works both halves of Peru's coastal cooking. The raw side runs deep — ceviche clásico, ceviche mixto, pulpo al olivo, tiradito tricolor — while causa and papa a la huancaina hold the classics down. Then the Chinese-Peruvian half arrives: chaufa aeropuerto, kam lu wantan, sopa wantan de la calle Capon. Lomo saltado for the table, picarones after. Two culinary histories on one menu, and neither treated as a novelty.
