Open from seven in the morning, this East 16th Street counter in Hialeah builds its day around the tamal: criollo, con encuentro, or wrapped around empella with avocado on the side. Around it sits the rest of a proper Cuban repertoire made in house - lechon asado by the pound, chicharron frito, ham-and-chorizo and cod croquetas, black beans, pan con lechon, a Cuban sandwich.
