Griot is the thing to lead with - pork shoulder marinated, boiled down and fried hard, served with pikliz - alongside cabrit in its sauce, whole fried snapper, and legume, the slow-cooked vegetable stew with beef that takes half a day to get right. Rice and plantain fill out the plate. Doors open mid-morning and stay open late into the evening, which suits a room that draws as much of a takeaway trade as a sit-down one. Straight-ahead, well-priced Haitian home cooking.
