Modern American cooking on South Monroe Street in Tallahassee, dinner Monday through Saturday and brunch at the weekend, with a separate omakase counter for anyone who wants the chef to drive. The kitchen is more ambitious than the neighbourhood suggests: gambas de Sevilla with Calabrian chili and salsa verde, bang bang salmon bites, oysters raw or baked Rockefeller-style, artichoke rotolo in bechamel and pomodoro, American wagyu ragu on campanelle, and an eight-ounce Steak Diane with robuchon potatoes. Happy hour runs weeknights from five. A polished room that doesn't take itself too seriously.
