A South Dixie Highway sushi bar that treats the menu as a moving target rather than a fixed list, Noe pushes past the standard roll count into tuna tartare with crispy wontons, a butter truffle crab roll, truffled dumplings, beef tenderloin ramen and a lamb ossobuco that has no business being this good next to nigiri. Bento boxes handle lunch. The bar matters here too - a Japanese-inflected margarita and passion fruit drinks lead a well-built cocktail list, and happy hour prices are kind. Diners praise the staff's recommendations as much as the food. Lively, inventive, genuinely fun.
