O-KU ALYS BEACH – Restaurant
The Indigo Road group's sushi room on Admiralty Row, a short walk from the white courtyards of Alys Beach. The kitchen works the top end of Japanese fish: otoro spoons layered with uni and kaluga caviar, chutoro tartare with apple and pickled wasabi stem, kanpachi crudo under shiso vinaigrette, and an A5 wagyu sando on buttered milk bread with sturgeon caviar. Warmer plates bring braised short rib bao and rock shrimp in spicy aioli. Fresh wasabi is grated to order. Dinner nightly from four, with lunch from late morning at the weekend. Precise, pricey, and plated with real intent.
