Chicken over fire since 1983, now working out of a truck in Medley and Doral. Pollo Graduado turns out crisp-skinned, juicy birds and serves them with mini arepitas and a green sauce that regulars treat as the actual reason to come. Portions are built for sharing and the operation moves fast. Open from lunchtime into the evening, with delivery through the usual platforms. Diners consistently name the chicken and the salsa verde in the same breath. Four decades of doing one thing, and no sign of tiring of it.
