The wood-fired taboun oven at the heart of every Furman's was built in Naples to the chain's own spec, and it shows in the char on the crust. Founded in 2019 by siblings Aviad and Avivit Furman, the kitchen proofs its dough for 48 hours, makes sauces and toppings fresh daily, and sources cheese from Israeli dairies. The Zichron Yaakov branch, inside the Mul Zichron mall, runs the full range: margherita and white margherita, roasted aubergine with parmesan, the mushroom-sauce Mushroman's, and a burnt-tomato pie with Bulgarian cheese. Serious pizza, without the ceremony.
