Taipa Peruvian started as a food truck in 2012 under Chef Carlos Paredes and his wife Michelle, and it now cooks out of 5751 Bird Road in the Red Bird corridor, with a second room opened a block from Coral Gables in September 2024. The kitchen holds the traditional line - Peruvian seafood first, ceviche in several forms, and the criollo classics behind it - using proper ingredients rather than local substitutes. Service runs 11:30 to ten. Diners rate it consistently high across every platform it appears on. A truck-to-table story that kept the cooking intact.
