Tapudis takes the humblest thing in the Israeli market - the potato - and builds an entire counter around it. Hot baked potatoes and corn, split open and loaded with toppings, from a chain founded by Itay Oz, a Nes Ziona local who started it after his army service with a stated commitment to Israeli produce and local growers. Chef David Gadge has since developed a dish for the menu. Quick, warm, filling and cheap, and it does not pretend to be anything else.
