Chef Wat Sang and partner Zohar Shterek, both out of Moon, set up on HaRakevet Street in the Levontin quarter and built the room around the counter, where the best seats face the chefs. The menu reaches well past sushi into ramen and robatayaki, with the chicken ramen drawing the most repeat orders and the fish getting consistent marks for freshness. Cocktails are taken as seriously as the raw fish. A weekday lunch discount and an early-evening happy hour keep the bar busy before dinner service properly starts. Sushi with a real kitchen behind it.
