A Tel Aviv salad bar built on a simple premise: vegetables that came straight from the grower, assembled fast enough for a lunch break. You either build your own bowl from the counter or take one of the composed salads the kitchen has already worked out. Black quinoa turns up alongside sauteed vegetables dressed with soy and date syrup; tahini does most of the heavy lifting on the dressings. Juices are pressed on the premises. It is vegetarian throughout, largely vegan, and geared to weekday daytime trade, counter and delivery both. Central locations, quick turnaround, and no interest in heaviness.
