Tonkotsu with pork chashu is the benchmark bowl, with a spicy tantanmen for anyone chasing heat, and broths available in beef, chicken and vegan versions. A sushi side runs nigiri and signature rolls including the Dream Roll, backed by dumplings, bao buns and shrimp tempura. Regulars single out the broth and the care taken with presentation. A serious bowl in a town that did not have one.
