בלה צ׳או Bella ciao – restaurant

Bella Ciao is a family-run Italian bistro on HaMoshav in Pardes Hanna-Karkur, built on Sicilian cooking and doughs given a full forty-eight hours to ferment before they see heat. Pasta is made by hand on site; the pizza comes off the same discipline. The people behind it have been at this for more than two decades and the kitchen shows it — ingredients chosen deliberately, nothing rushed to the pass. It is small and warm, closer to a neighbourhood trattoria than to a restaurant with ambitions. Come hungry and let the dough do the talking.
