Calusso opens Tuesday to Saturday at half five, running Harbour Hour at the bar for the first two hours with cocktails and small plates. The kitchen leans French and Italian through a South Florida lens: foie gras torchon with quince and pistachio, oyster caprese with stracciatella, steak tartare, grilled wahoo under tomato fudge, Ora King salmon and a forty-day aged bistecca built for two. Chocolate and black sesame closes it out. Refined coastal cooking, and entirely sure of itself.
