COBALT – Restaurant

A contemporary steakhouse on Ocean Drive, part of the Kimpton hotel on Vero Beach's barrier island and open to anyone who books a table there. The grill turns out dry-aged prime New York strip, Delmonico ribeye, filet mignon, wagyu coulotte and prime hanger, served with chimichurri or hollandaise. Cold seafood is the other pillar: oysters of the day, colossal shrimp cocktail, tuna nachos on crispy wontons, and a grand tower built for two or four. Brunch brings short rib and smoked salmon benedicts, croque madame, and buttermilk chicken and waffles. The kitchen leans on local, sustainable sourcing and hormone-free meat.
