Nicaraguan home cooking in a Miami cafeteria, where the sides list runs longer than most menus: gallo pinto, tajadas and maduros, cassava, fried cheese, coleslaw, pico de gallo, smashed potatoes. Nearly every plate comes with two of them. Carne asada is the anchor, alongside chancho con yuca, chicken fajitas, breaded fish fillet and salpicon, the shredded beef salad Nicaraguans eat at any hour. Sopa de gallina, a proper hen soup, arrives with its own pair of sides. Finish with arroz con leche and wash it down with cebada, the cold barley drink. Two Miami units trade under one family name.
