A steakhouse in Pensacola's Seville quarter on East Government Street, where USDA Prime and Certified Angus cuts are hand-cut, dry-aged in house for at least thirty-five days, and charred in a sixteen-hundred-degree oven. Filet mignon, Delmonico ribeye, New York strip and a tomahawk built for two anchor everything. Around them sit oysters Rockefeller, crispy Rhode Island calamari, seared scallops with Cajun corn maque choux, a lump crab cake in Tabasco beurre blanc, lamb lollichops and Scottish salmon Oscar. Sides lean local: crawfish jambalaya risotto, bourbon whipped sweet potatoes, beer and bacon mac. Downstairs dining, an upstairs lounge, and live music.
