JAY'S SMOKIN BBQ – Restaurant

Jay Cammarata got a smoker as a wedding gift and it turned into a career. Jay's ran as a barbecue trailer before settling into a brick-and-mortar room on Tamiami Trail in the old Muscle Car City space, retro diner seating and car memorabilia still in place. The method is Texas: dry rub, no sauce, kiln-dried red oak, low and slow. Brisket and burnt ends, ribs, sausage, pulled pork, chicken, with gouda mac and cornbread alongside, all made from scratch. Regulars talk about the bark and the smoke ring. Sauce is on the table. You may not reach for it.
