MACHU PICCHU CEVICHE AND BAR – Restaurant

Peruvian cooking with the volume up, tucked into a Pines Boulevard plaza in Pembroke Pines. The kitchen leans hard on the classics and does not soften them: anticuchos of marinated beef heart off the grill with golden potatoes and corn, causas built on pressed yellow potato and stuffed with tuna, shrimp or octopus, pulpo al olivo under a creamy botija olive sauce. Ceviches run from a straight corvina to the fiery carretillero, all citrus-bright leche de tigre and sweet potato. Diners keep pointing to the freshness of the fish and the honesty of the seasoning. Lima flavours, no apologies.
