A shawarma house at the entrance to Kafr Qara, where three loaded spits turn all day — chicken, turkey and lamb — and the meat goes into pita, laffa or a fresh baguette. Plates come surrounded by salatim, with falafel balls and chips filling the gaps. It opens late morning and runs to eleven at night, seven days a week, and there is room to sit and eat in. Diners return for the carving and for a host who tends to send out more than was ordered. Patience helps when it is packed.
