Cofix changed how Israel buys coffee. Launched in 2013 on a single flat price — five shekels for anything on the counter, espresso to danish to sandwich to juice — it was written off as impossible and then queued out the door, forcing the big chains to cut their own prices in what the press still calls the Cofix effect. The base price has since nudged up and the range has widened, but the model holds: grab-and-go counters, no table service, no ceremony. Coffee as a commodity, priced like one.
